Upton Sinclair’s 1906 muckraking novel The Jungle, exposed corruption and unsanitary conditions in the meat packing industry; and the hue and cry of an outraged public partly contributed to the passage of the Pure Food and Drug, and Meat Inspection Acts. With food product recalls, salmonella and e. coli outbreaks making today’s headlines, consumers are no less concerned with the quality and safety of their food then they were after Sinclair published The Jungle. ASI food safety consultant James Carter talks about today’s food safety standards and systems, food audits, and government regulations designed to keep our food safe.
